Sweet Potato Fries with Green Herb Sauce

Full disclosure: I made these in September, shot them, queued the post, and then waited for the precise moment that is the Super Bowl to make it live. Some things are worth waiting for, am I right? I just felt like these needed a reason to shine, and what better timing than the biggest game of the year. I, for one, will likely be missing said sporting event due to being back in California for the weekend and frankly need to soak up every last moment of its glory. 

Now to the good stuff. I've had dreams about this sauce. It's that good. Magical, really, and is great for pretty much everything. Burgers, pasta, fries, chips and veggies – the options are yours for the taking. Whip it up in a food processor or blender and you're good to go. 


Green Herb Sauce

3/4 c packed basil

1/4 c cilantro

1/4 parsley

1/2 shallot

3 cloves garlic

juice of 1 lime

5 T evoo

Sweet Potato Fries with Green Herb Sauce

3 sweet potatoes sliced into 1/4" slices (about 4 cups)

garlic salt (Trader Joe's is the best kind)

pepper

pinch paprika

1 t crushed red pepper

cotija cheese

leftover herbs


Preheat oven to 400. Cut sweet potatoes as uniform as possible, and lightly toss in evoo. Sprinkle with garlic salt, paprika, pepper, and red pepper. Bake until crisp on bottom, around 15 minutes, then flip and continue cooking another 15 minutes. Cooking times may vary so be sure to check on them. 

While the fries are cooking, blend all sauce ingredients until combined. 

When fries are done, top with sauce, cheese, and leftover herbs for garnish.
